You're looking in the wrong place, check FitFox00.pac and FitFox00.pcs. The normal FitFighter.pac is the moveset and shared data file.

Yeah, there should be nothing unique about texture replacement in Minus. Either use bbox to import textures and such or drag and drop the Fit0X files you need into their respective folders.

Are you running off a USB launcher and does your launcher for Minus have Minus theme?

Do you have any non-Wii-MotionPlus Wiimotes? Those will work with Gecko OS, and if you'd prefer to use a MotionPlus controller for actual gameplay once you've booted Minus all controllers will work as normal.
